Egg salad roll



I've never given my boy a bread roll before, so wasn't sure if his teeth would be able to handle it... But after a little persuasion he did actually enjoy it and almost ate the whole thing which I wasn't expecting! He's still teething quite badly at the moment so each food time is a bit of a struggle to get him to eat anything. But thankfully, he ate a good amount for his lunch today! 

What I used for this recipe:
1 egg (at room temperature)
1 tbsp natural yogurt
1 tsp mayonnaise 
2 tsp dill
Spinach 
2 cherry tomatoes (cut up into a 'salsa')
Wholemeal bread roll
Butter (optional

Place egg into a saucepan filled with cold water. Bring to the boil, reduce heat and simmer for 10 minutes for a hard boiled egg. Then run cold tap into the saucepan over the sink for a couple of minutes to start the cooling process. Leave to sit in cold water for another 10 minutes to cool for handling. Then peel shell off and slice up into small pieces. Put into bowl and add the yogurt, mayo and dill and mix together. 



Butter the bread roll, layer shredded spinach and tomato salsa and add a dollop of the egg mixture. Sprinkle a little more dill on top and we are done!
