Tomato Veggie Pasta


This is another favourite with my boy. It's an easy way to get loads of veg into one meal. I have chosen to use wholewheat pasta for this recipe as it is higher in fibre, but any pasta will do. Baby pasta or soup pasta is ideal. 

For this recipe I use:

1 small white onion diced
1 small garlic clove
1 small portion butternut squash diced
1 carrot diced
1 small apple diced
1 tin tomatoes
2 tbsp tomato purée 
Baby or soup pasta
Splash olive oil
Fresh basil 
Wholewheat pasta 

Heat oil in pan and add the onion, apple, carrot and butternut squash. Stir on low heat for around 5 mins. Add diced garlic and cook for one minute. Then add tinned tomatoes bring to the boil. Reduce the heat and add the tomato purée and basil. Stir occasionally. Meanwhile boil pasta to packet instructions. Once cooked, I drain the pasta and cut up into smaller pieces, however this depends on what your baby can handle. 

You can either purée the tomato mix or leave lumpy for a more textured sauce. Add to pasta and serve once cooled. This is an ideal meal to freeze and a great way to get fruit and veg into baby's diet.
