Breadcrumbed Chicken Bites




These are a great finger food for babies and so simple to make. 

You will need:
Chicken diced

For breadcrumbs
Rolled oats
Leftover bread
Leftover crackers 
1 egg

Put oats, torn bread and crackers into food processor and blitz until almost fine. (For the measurements, I judged on the amounts of chicken I was using, so for this recipe I was only breadcrumbing 3 strips of chicken, so used 1/4 cup of oats, 1/2 piece brown bread and 3 crackers!) Place breadcrumbs into a bowl.

Mix egg together in a separate bowl. Add diced chicken and cover to get an even coating of egg mixture. Then remove and dip into breadcrumbs. Once lightly coated, place back into egg mixture and again back into breadcrumbs. 

Preheat grill to a medium heat. Place chicken into oven tray and bake for 15-20 minutes or until golden. Be sure to flip pieces every now and again for an even colour. 

Now add to pasta, salads or just as finger food! These are perfect for lunch boxes. Let me know what you think!
